Varietal: 100% Cabernet Sauvignon.
Origin: The Cabernet Sauvignon is a grape which ripens quite late. It is well-known as the grape from the Médoc and the Graves region, but can also be found in all the large vineyards famous for their red wines, excepting those in the Bourgogne region. This grape produces strong, tannin-rich wine with a deep color and fine aging potential. Selection is made from various vineyards of the Aude region with its gravelly soil. Yield is 60 hectoliters per hectare. The average age of the vineyards is ten to twelve years.
Vinification: a mechanical harvest and bruising of the grapes; fermentation occurs at a constant temperature during a period of fifteen days; subsequently a light filtration is carried out to preserve the primary aromas of the wine.

Harvested: picked by hand.
Storage: should be enjoyed in four to six years(15 - 16 °C).
Colour: deep ruby red.
Bouquet: primarily small dark fruits with notes of herbs and green peppers.
Flavour: supple, well-balanced, lovely retro-olfaction.
Suitable combinations: regional dishes, poultry in sauce, hard cheeses.
